It’s Fall – and apple season. We love warm, baked apples with an extra plant-based protein boost from Apple & Tart Cherry Superfood Clusters.
2 pie crusts, homemade or store-bought
2 tbsp butter or coconut oil
4 medium honey crisp apples (peeled and sliced)
2 cups fresh or frozen cherries, pitted
1/4 cup of coconut sugar
2 tbsp corn starch
1 tbsp cinnamon
pinch of salt
1/2 cup of Apple & Tart Cherry Superfood Clusters for serving
Dairy-free ice cream (optional)
Preheat the oven to 375 degrees. Make sure the pie crusts are at room temperature (25-30 minutes).
Peel and slice your apples
Melt 2 tablespoons of butter or coconut oil in a medium pot. Add in the apples and saute over medium heat for 2-3 minutes to soften. Add the frozen cherries and cook for another 2-3 minutes, stirring occasionally.
In a separate bowl, mix the cornstarch, sugar, cinnamon, and salt. Pour the mixture on the apple and cherries mixture and stir to combine. Cook for 2-3 minutes and remove from the heat.
Place one pie crust into a pie dish – the other pie crust will make your topping.
Add your filling into your pie dish and top with additional crust.
Place the pie into the preheated oven and bake for 55-60 minutes, or until golden brown.
When the pie is cooked, let it cool for 1-2 hours before eating.
Serve warm and top with Apple & Tart Cherry SNACK and dairy-free ice cream if desired!
