All the taste of Blueberry Pie, without all the guilt! We made these Blueberry Pie Bars with some extra crunchy SNACK Superfood Cluster topping for some added plant-based protein, Superfood goodness.

Serves 4
1.5 cups gluten-free almond flour
1 cup of old fashioned oats
1/2 cup of coconut sugar
8 tbsp of vegan butter, melted
1 tsp vanilla extract
1 cup SNACK Blueberry & Matcha Superfood Clusters
1/2 tsp ground cinnamon

3 cups fresh blueberries
2 tablespoons of maple syrup
1 tbsp cornstarch
pinch of salt

– Preheat oven to 350 degrees F
– Spray or line a non-stick pan
– In a bowl add almond flour, oats, coconut sugar, cinnamon, and baking soda and mix together
– Add the melted butter and vanilla extract and stir until you get a crumbly consistency
– Add just under 2 cups of the mixture into the pan and chill the rest
– Add the blueberries, maple syrup, vanilla extract, cornstarch, and salt to a saucepan and bring to a boil
– Reduce the heat to simmer for 3 minutes or until thick
– Pour over the crust in your pan and spread evenly
– Take the mixture out of the fridge and top over the blueberry mixture
– Bake for 30 min
– When ready, take out and sprinkle SNACK Blueberry & Matcha Superfood Clusters on top of the crumble and press down slightly so that they stick
– Allow to cool before eating.
