We love oatmeal in the morning. Who doesn’t!? But have you ever had quinoa for breakfast? We love this quinoa breakfast bowl with Blueberry & Matcha SNACK for TWO extra plant-based protein boosts. With natural sweetness from fresh (or frozen!) blueberries and a nutty crunch, this breakfast will keep you full for hours!

Serves 2
Ingredients:
½ cup Quinoa
1 cup rolled oats
2 cups almond milk (or other plant-based milk)
2 cups water
1 pinch salt
1/4 cup chopped dates
2 tbsp sliced almonds
⅓ cup of Blueberries
1/4 cup Blueberry & Matcha SNACK
2 tbsp maple syrup or honey (optional)

Instructions:
Rinse and drain the quinoa until the water runs clear
Combine the quinoa, oats, almond milk, and water in a saucepan over medium heat and bring to a boil.
Reduce to a simmer and cook until all liquid is absorbed (about 15 min)
If the porridge is too think, add more water or almond milk
Remove from heat
Spoon into two bowls and top with the chopped dates, sliced almonds, blueberries, and Blueberry & Matcha SNACK
Drizzle with maple syrup or honey for added sweetness
