We’re addicted to pancakes. Especially grain-free ones topped with fruit and Apricot & Matcha SNACK for an extra plant-based protein boost.

Serves 1
1/4 cup almond milk
2 eggs
1 cup almond flour
1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
2 tsp coconut oil
2 tbsp of Nutella for dipping (optional)

Mix the dry ingredients in a bowl.
Mix the wet ingredients in a bowl.
Pour the wet ingredients into the dry ingredients and mix well.
Heat 1 tsp of oil in a large skillet on medium heat and pour 1/4 cup of the batter into the pan. Cook for 2-3 min on one side. You will start seeing bubbles form on the top side – then flip and cook for another minute.

Top with blueberries, strawberries, sliced almonds, or any of your favorite toppings!
