We love pancakes. We also love tacos. So we put them together and topped them with our Blueberry & Matcha Superfood Clusters for a protein-packed breakfast to get us through the day!

Serves 2
(8-10 small pancakes)

1 cup Kodiak Cake Pancake Mix (or your favorite mix)
3/4 cup of your favorite nut milk – we like almond
1 egg
1/2 tsp of vanilla extract
1/2 cup of Greek yogurt or non-dairy yogurt
Fresh blueberries and strawberries
1/2 cup of Blueberry & Matcha Superfood Clusters
Sprinkle of powdered sugar (optional)

Combine the pancake mix, nut milk, egg, and vanilla in a medium-sized bowl and stir until combined.
Pour 1/4 cup of batter onto a preheated skillet over medium heat. When bubbles begin to form, flip the pancakes.
Once pancakes are cooked, top each one with 1-2 tbsp of yogurt, fresh berries and SNACK.
Fold into a taco shape and sprinkle with powdered sugar.
