Try this summer superfruit salad for a healthy, protein-packed punch!

Serves 4

1 large head of lettuce, rinsed and chopped
1 cup red onion, chopped
1 cup cooked chicken, chopped
1 cup cooked bacon, chopped
2 Avocados, chopped
1 cup green apple, chopped
1 cup grapes
1 cup fresh apricot, chopped
1 cup strawberries, chopped
3/4 cup Gorgonzola cheese, crumbled
1 cup Apple & Tart Cherry SNACK

For the Dressing:
3 tablespoons red wine vinegar
1 teaspoon grated lemon zest
1 tablespoon freshly squeezed lemon juice
2 1/2 teaspoons dijon mustard
1 tablespoon honey
Salt and pepper to season
1/2 teaspoon freshly ground black pepper
2/3 cup virgin olive oil

Step one: In a large bowl toss the greens, chicken, bacon, apple, red onion, grapes, apricots, strawberries, Gorgonzola cheese, and avocado
Step two: Make the dressing by adding together the vinegar, lemon zest, lemon juice, mustard, honey, salt, and pepper into a bowl and gradually adding the olive oil while whisking continually
Step three: Add enough dressing to the salad to cover the ingredients, and toss one more time
Step four: Sprinkle with 1/4 cup of Apricot & Matcha SNACK for an added protein-packed crunch and serve immediately
